This can be made with chicken, beef, or shrimp. If you use leftover cooked beef/chicken it's super fast and easy. Great over rice. Ingredients:
1/2-1 lb beef, strips |
1/2 cup pineapple tidbits |
2 tablespoons soy sauce |
2 tablespoons brown sugar |
2 tablespoons garlic, minced |
2 tablespoons ginger, minced |
2 teaspoons dry mustard |
3/4 teaspoon pepper |
1/2 cup mushroom, sliced |
1/4 cup tomato, diced |
3 green onions, sliced |
2 teaspoons cornstarch |
additinal salt and pepper |
Directions:
1. Salt and pepper beef strips and cook in pan coated with cooking spray on medium-high heat. Remove from pan. *skip this step if using leftover cooked meat. 2. Add mushrooms and onions to pan and cook stirring occasionally until softened (5-6 minutes). Add garlic and cook an additional 30 seconds. 3. Add remaining ingredients and stir together until heated through. Allow the cornstarch to thicken the liquid to make a sauce. *Add additional soy sauce if desired. 4. Serve with rice. |
