Another kidney friendly, diabetic recipe. I got it from Ingredients:
1/2 cup stevia granular sweetener |
1/2 cup water |
1/2 cup packed basil leaves |
1 tablespoon lime peel, grated |
4 cups fresh pineapple, cubed |
3 cups fresh strawberries, quartered |
1/2 cup fresh blueberries |
Directions:
1. Combine sweetener with 1/2 cup water in a saucepan; bring to a boil. 2. Cook 1 minute or until sweetner dissolves. 3. Remove from heat and stir in basil and lime peel. 4. Cool to room temperature then strain through a fine strainer into a bowl; discard solids. 5. Combine pineapple, strawberries and blueberries in a large bowl. 6. Drizzle with Splenda mixture and toss to coat. 7. Chill until ready to serve. |
