Pineapple Banana Nut Snack Cake |

A really tasty snack cake that will make them want more! Ingredients:
1 1/2 cups all-purpose flour |
3/4 tsp baking soda |
1/2 tsp cinnamon |
1 cup sugar |
1/2 tsp salt |
3/4 cup veg oil |
3/4 cup crushed pineapple with juice |
2 eggs, beaten |
1 cup diced bananas |
1/4 tsp vanilla extract |
1/2 cup chopped pecans or walnuts |
Directions:
1. Preheat oven to 350F. 2. Grease a 9 inch suare cake pan. 3. In a large bowl, sift together flour and baking soda. 4. Add the cinnamon, sugar, salt. 5. Make a well in the center of the flour mixture and add oil, pineapple, eggs, bananas and vanilla. 6. Stir to blend (DO NOT USE MIXER). 7. Fold in nuts. 8. Pour batter into prepared pan. 9. Bake for 30 minutes or until toothpick inserted comes out clean. |
