Take your tastebuds to the Tropics!! This moist banana loaf has pieces of juicy pineapple throughout. A twop-loaf recipe, so enjoy one now, and freeze the other for unexpected visitors!! Ingredients:
3 cups all-purpose flour |
2 cups sugar |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon salt |
1 cup undrained crushed pineapple |
3 eggs |
1 1/2 cups canola oil |
2 cups ripe bananas, mashed |
2 teaspoons vanilla |
Directions:
1. Combine first 5 ingredients. Beat remaining ingredients together in large bowl until blended. 2. Add dry ingredients stirring until thoroughly combined. spread in two greased 8 1/2 x 4 1/2 -inch loaf pans, dividing evenly. 3. Bake at 350F for 60-70 minutes, or until a toothpick inserted in center comes out clean. 4. Cool 15 minutes in pan, then remove to rack and cool completely. |
