Pineapple Banana Coconut Bread |

This easy to make and delicious bread has a tropical flavor that will have you begging for more. Ingredients:
1/2 cup butter |
1 cup sugar |
2 eggs |
2 cups flour |
1/2 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon salt |
1/2 cup mashed banana |
1 (8 ounce) can crushed pineapple, drained |
1/2 cup chopped macadamia nuts |
1/2 cup shredded coconut |
Directions:
1. Cream butter and sugar. 2. Add eggs, one at a time, beating well after each. 3. Sift dry ingredients and add to creamed mixture. 4. Fold in banana, pineapple, coconut and nuts. Pour mixture into a greased and floured loaf pan. 5. Bake at 350 degrees for 50-60 minutes. 6. Cool in pan 10 minutes, remove to wire rack. |
