It makes a nice side dish to go with pork or ham. We serve it at Thanksgiving sometimes. Ingredients:
1 13.5 oz. can pineapple chunks (reserve juice) |
2 t. flour |
1 cup sugar |
2 eggs |
pinch of salt |
1 8oz. pkg. cream cheese |
2 cups miniature marshmallows |
cheddar cheese, shredded |
Directions:
1. Drain pineapple chunks and reserve 3/4 cup juice. 2. In a double boiler, combine the juice, flour, sugar, eggs and salt. 3. Cook over very low heat until thick. 4. In a casserole dish, layer cream cheese, marshmallows and pineapple chunks twice 5. Pour sauce over top. 6. Finish with a generous layer of shredded cheddar cheese. 7. Bake at 350 for 25 minutes or until bubbly hot. |
