This dish can be prepared a day or two ahead and kept in the refrigerator prior to baking. Wonderful as a side dish with ham, chicken, or fish. Ingredients:
2 cans pinespple chunks, drained, leaving small amount of juice |
2 cups shredded cheddar cheese |
1/4 cup flour |
1 cup crumbled ritz crackers |
1/4 cup butter, melted |
Directions:
1. Preheat oven to 350*. Pour pineapple chunks into medium mixing bowl. Combine Cheddar cheese and flour in separate bowl until cheese is covered with flour. Mix in well with pineapple chunks. Pour into small casserole dish, sprayed with Pam. Sprinkle crumbled Ritz crackers on top and drizzle with melted butter. Bake approximately 45 minutes or until bubbling and brown around top edges. |
