Pineapple-Applesauce-Pumpkin Muffins |

This is a very moist muffin and great for breakfast or snack. Super easy and quick to make. Ingredients:
1 1/2 cups flour |
3/4 cup sugar |
3/4 teaspoon baking powder |
3/4 teaspoon baking soda |
1/4 teaspoon clove |
1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/2 teaspoon salt |
1/4 cup canola oil |
1/4 cup applesauce |
1/4 cup crushed pineapple |
2 eggs |
3/4 cup canned pumpkin |
Directions:
1. Preheat oven to 400 degrees. Spray a mini muffin pan with nonstick cooking spray. Set aside. 2. In a large bowl, combine first 8 ingredients. 3. In a separate bowl, combine oil, applesauce, pineapple, eggs, and pumpkin. 4. Add to dry ingredients and stir just to combine. 5. Spoon a rounded tablespoon into each muffin cup. 6. Bake for 12 - 14 minutes. |
