Pineapple and Nectarine Salsa |

This is a throw together salsa when I needed something to go on my tacos. It was yummy and didn't want to forget it so I am posting it here. Ingredients:
1 (15 ounce) can pineapple chunks drained reserving the juice |
1 nectarine, diced |
1/2 red onion, diced |
1/4 cup cilantro, chopped |
1 chipotle chile in adobo, finely chopped |
1 1/2 tablespoons brown sugar |
2 tablespoons lemon juice |
2 garlic cloves, finely chopped |
1 pinch salt |
Directions:
1. Chop pineapple chunks to desired size. 2. Combine ingredients in bowl. 3. Add 1-2 tbls of reserved pineapple juice. 4. Add salt to taste. 5. Stir and serve. |
