this again was something that sounded good and was different from your regular salsas... I can't wait for the fresh cukes starts.... and it is a good way to use up some of the extras... the recipe is from Charles Gipe, Jr. Read more ., Executive Chef Ingredients:
1 1/2 cups fresh pineapple, diced |
1 1/2 cups cucumber, seeded, diced |
2 teaspoons garlic, minced |
2 teaspoons ginger, fresh, minced |
8 mint leaves, strips |
2 tablespoons cilantro, fresh, chopped fine |
1 lemon, juiced |
1 lime-juiced |
1 fresh red chile pepper, minced |
5 scallions, diced |
1 small red onion |
Directions:
1. In a large glass bowl, mix pineapple and cucumbers. Add garlic, ginger, mint, Cilantro, both juices, pepper, scallions, and onion. Fold together and put in a self-sealing plastic storage bag and seal. Serve with chips. |
