Ingredients:
2 teaspoons olive oil |
1 1/2 cups chopped onion |
4 garlic cloves, minced |
5 cups hot cooked rice |
1/3 cup chopped fresh basil |
1/3 cup pine nuts, toasted |
1/2 teaspoon salt |
1/4 teaspoon pepper |
basil sprig (optional) |
Directions:
1. Heat olive oil in a large nonstick skillet over medium heat. Add onion and garlic, and sauté 3 minutes or until tender. Combine onion mixture, rice, and remaining ingredients in a bowl; toss well. Garnish with a basil sprig, if desired. |
