This is a great pineapple dessert. I got this from a Sunday School classmate and she is a great cook. This is a very refreshing dessert loaded with great flavors. Enjoy Ingredients:
8 ounces cream cheese softened |
1/3 cup granulated sugar |
1/2 teaspoon rum extract |
3-1/2 cups thawed frozen whipped topping |
8-1/4 ounce crushed pineapple in syrup |
7 ounces coconut |
Directions:
1. Beat cream cheese with sugar and rum extract until smooth. 2. Fold in 2 cups whipped topping, pineapple with syrup and 2 cups coconut. 3. Spread in square layer pan lined with plastic wrap. 4. Invert pan to serving plate then remove pan and plastic wrap. 5. Spread rest of whipped topping and sprinkle with remaining coconut. 6. Freeze until firm about 2 hours then cut in wedges to serve. |
