My kids don't like pineapple or coconut, so this is what I make for just my hubby and me! YUM! I'm allergic to alcohol, but feel free to use the real stuff!! (Mike turns into Captin Jack Sparrow and calls it Why is the rum gone? Read more ? )
Ingredients:
1 stick butter
1 cup brown sugar
1 tbs turbinado sugar (raw)
1 to 1 1/2 tsp of rum essence
6 maricino cherries
1 20oz can crushed pineapple - drained
1 cup flaked coconut
1 box french vanilla cake mix
*1 1/4 cups water
* 1/3 cup oil
* 3 eggs
1 tsp rum essence
Directions:
1. Melt butter in a 9x13 pan
2. Sprinkle brown sugar over butter
3. Cut cherries into quarters and sprinkle over sugar/butter
4. Sprinkle with Turbinado sugar
5. Drain crushed pineapple. Mix coconut and pineapple and rum, then gently spread over sugar/butter/cherries
6. Prepare cake according to package directions.
7. Pour gently over topping
8. Bake at 350 for 35 minutes
