This is a recipe for diabetics or anyone watching their sugar intake. Ingredients:
4 enveolopes knox gelatin |
6 packages of sweet and low |
21/2 cups unsweetened pineapple juice, heated to boiling |
1 c vanilla ice milk |
2t flaked coconut |
1/8 t. rum extract |
Directions:
1. In mediumt bowl mix gelatin with sweet and low. 2. Add hot juice 3. Stir til gelatin is dissolved 4. Stir in remaining ingredients. 5. Blend Well. 6. Pour into an 8 or 9 inch baking pan. 7. Cut into 1 inch squares 8. Makes 6 dozen. |
