A LIGHT REFRESHING DESSERT WITH PINEAPPLE, PUDDING COCONUT, MARSHMELLOWS AND NUTS Ingredients:
1 - 20 ounce can of crushed pineapple |
i cup instant rice |
1 -3.4 - ounce- package of instant banana cream pudding, or vanilla |
2 cups milk |
1/2 cup flaked coconut |
1/2 cup minature marshmellows |
1/3 cup chopped nuts your choice |
1 tablespoon lemon juice |
1 banana sliced |
Directions:
1. DRAIN PINEAPPLE AND RESERVE THE JUICE. 2. BRING JUICE AND 1/2 CUP OF WATER TO A BOIL, STIR IN RICE AND SIMMER 2 MINUTES, 3. REMOVE FROM HEAT, COVER AND LET STEAM 5 MINUTES. 4. PREPARE PUDDING, IN A MEDIUM BOWL, ACCORDING TO PACKAGE INSTRUCTIONS USING THE 2 CUPS OF MILK 5. ADD PINEAPPLE, COCONUT, MARSHMELLOWS, NUTS AND LEMON JUICE, BANANA AND HOT RICE MIXTURE. STIR TO MIX 6. CHILL 30 MINUTES OR MORE |
