This variation on the classic Piña Colada is served at the Caribe Hilton in San Juan, Puerto Rico; it's finished with a dark rum float for extra flavor. Ingredients:
2/3 cup pineapple juice |
6 tablespoons canned sweetened cream of coconut (such as coco lópez) |
3 tablespoons white rum |
2 cups ice cubes |
4 teaspoons dark rum |
Directions:
1. Combine first 3 ingredients in blender. Add ice and blend well. Pour into 2 tall glasses. Spoon 2 teaspoons dark rum over each and serve. |
