Pimiento Cheese Stuffed Celery |

Ingredients:
2 cups (8 ounces) shredded sharp cheddar cheese |
2 cups (8 ounces) shredded mild cheddar cheese |
1 (2-ounce) jar chopped pimiento, drained |
3/4 cup cottage cheese |
1/2 to 3/4 cup mayonnaise |
8 to 10 drops hot sauce |
pinch of salt |
1/4 teaspoon pepper |
4 stalks celery |
paprika |
Directions:
1. Position knife blade in food processor bowl; add Cheddar cheese and pimiento. Process 3 to 5 seconds. Stop processor, and scrape sides of bowl with a rubber spatula. 2. Add next five ingredients; process until smooth. Add additional mayonnaise, if necessary. Chill. Wash celery, and cut into 3-inch pieces. Using a pastry bag, pipe cheese mixture into celery pieces; sprinkle with paprika. 3. Note: If food processor is not available, combine ingredients in a bowl; beat with electric mixer until smooth. |
