Pimiento Cheese Sandwiches

Ingredients:
1 (12-ounce) package sharp cheddar cheese, cut into 1-inch cubes
1 (4-ounce) jar chopped pimiento, drained
3 medium-size sweet pickles
1/2 cup mayonnaise
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2 (16-ounce) loaves thin-sliced white bread
Directions:
1. Position knife blade in processor bowl; add cheese, pimiento, and pickles. Process 5 seconds. Stop processor, and scrape sides of bowl with a rubber spatula. Process 3 to 5 additional seconds. Add remaining ingredients except bread; process 5 seconds or until mixture is well blended. Set aside.
2. Remove crust from bread, and cut into assorted shapes. Spread filling on half the pieces; top with remaining pieces.
3. Note: To mix pimiento cheese without the use of a food processor, grate cheese into a medium mixing bowl; add remaining ingredients except bread. Mix at medium speed of an electric mixer until well blended.
