Pimiento Cheese Salad or Sandwich Spread

Great side dish for summer fare, and a family favorite for sandwiches.
Ingredients:
1 package sharp cheddar cheese
1 can pimiento, drained and julienned
1/2-1 onion, finely minced
mayonnaise
salt (optional)
garlic paste (optional)
Directions:
1. grate cheddar into a bowl.
2. add slivers of pimiento.
3. add minced onion.
4. stir in mayonnaise, salt and garlic paste to taste.
5. cover and refrigerate to let flavors meld.
