From Taste of the South magazine. Delicious! Ingredients:
4 teaspoons butter-melted |
2 cups shredded sharp cheddar cheese |
1 12oz jar roasted red peppers-chopped |
1 cup plain yellow cornmeal |
1 cup all purpose flour |
1 cup milk |
1/4 cup canola oil |
1/4 cup sugar |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 egg-beaten |
Directions:
1. Preheat oven to 400 degees. 2. Generously brush melted butter into a 9 baking pan or a cast iron skillet. Place in oven to heat. 3. In a large mixing bowl,combine remaining ingredients,stir until just combined. 4. Spoon batter into prepared pan. Bake 15-20 minutes or until top browns. 5. Cut into squares and serve hot with additional butter. |
