Pimento Cheese & Bacon Burger |

These sound awesome! A new way to cook burgers! Found in Cuisine-at-Home, Issue 63. Am placing here for safekeeping. Update 06/04/07 - these burgers have been placed on the homes' menu as an A La Carte option. Am very happy! Ingredients:
2 ounces cream cheese |
1/4 cup mayonnaise (hellman's) |
1 cup sharp cheddar cheese, shredded |
salt, to taste |
crushed red pepper flakes, to taste |
2 ounces sliced pimientos, drained |
2 lbs ground round or 2 lbs ground chuck |
salt, to taste |
fresh ground black pepper, to taste |
4 slices onions (1/8-inch thick) |
4 kaiser rolls, split toasted |
12 slices thick-sliced bacon, cooked |
green leaf lettuce |
tomato, slices |
mayonnaise (hellman's) or miracle whip, for rolls |
Directions:
1. Preheat grill to medium-high. 2. Process the cream cheese, mayonnaise, Cheddar and seasonings for the pimento cheese. 3. Add pimentos; pulse to combine. 4. Shape ground round or chuck into 8 (4 oz) portions on wax paper or parchment paper. 5. Press each portion into a 4 patty using a fork, then season with salt and pepper. 6. Top 4 patties with a slice of onion. 7. Cover with remaining patties, seal edges with a fork, and season again. 8. Grill burgers on an oiled grate for 4 minutes; flip and cook 2 minutes more. 9. Spoon 1/4 cup pimento cheese on each burger; grill 2 minutes longer. 10. Serve burgers on rolls that have been brushed with mayonnaise or Miracle Whip with bacon, lettuce and tomato. |
