Pieplates Favorite Chocolate Chip Cookies

After many years of dedicated research ;-) this recipe reliably produces chocolate chip cookies just the way I like them. The nibs add something really special, although no one will recognize them.
Ingredients:
1 c butter (2 cubes)
7 oz brown sugar
3 oz white sugar
pinch of salt
1 t vanilla
1 egg
10 oz all-purpose flour
1 t baking soda
6 oz chocolate chips
4 oz broken walnuts (more if you like)
1/4 c cocoa nibs
Directions:
1. Melt one cube of butter, and place the other cube in the container with it. When the second is soft, stir together and set aside. You can measure the sugars and the flour in the meantime.
2. Mix butter and sugars until very light, fluffy and smooth, probably 4-5 m.
3. Add salt, vanilla and egg and mix until creamy and fluffy
4. Add flour and baking soda and mix thoroughly.
5. Pour chips, nuts and nibs into the bowl and mix in by hand
6. For these to be chewy and crispy, use about 3 T dough for each
7. Bake at 350° for 8-9 m, or just until the top is set but not browned. Rotate the cookie sheet at 6 m.
8. Let cool on the cookie sheet for 3 m, then transfer to a rack to cool thoroughly.
9. These are best within 48 hours of baking, so feel free to shape the dough into 2 1/2” cylinders, wrap in plastic wrap and waxed paper, and store in the freezer. Slice into chunks 3/4 “ thick, and bake as above.
10. These are excellent without the cocoa nibs, but do try to get hold of some. You will like them.
