Apple Tarlet Ingredients:
2 granny smith apples |
1 ounce lemon juice |
1 pint water |
2 ounces unsalted butter |
4 ounces brown sugar |
2 ounces golden raisins |
1 ounce walnuts |
2 fluid ounces brandy |
2 teaspoons cinnamon |
freshly grated nutmeg |
1 teaspoon ground cloves |
5 ounces all-purpose flour |
1 tablespoon granulated sugar |
1/4 teaspoon salt |
4 ounces unsalted butter, chilled |
2 tablespoons cold water |
Directions:
1. Sauté apples in butter 2-3 minutes. Add walnuts & raisins. Flambé with brandy. 2. Add sugar and spices. Sauté a few minutes more. 3. Combine flour, sugar and salt in a robot coupe. Add butter and pulse until small granules form. 4. Add in 1 TB of water, adding more if necessary. Form, wrap and refrigerate. 5. After cooled roll out and fill with apples and bake in 350 oven until golden brown. |
