Try this spicy and different bean dish with some hot rice for a great, no fuss supper. Ingredients:
1 (15 ounce) can yellow hominy |
2 (15 ounce) cans pinto beans |
1 tomato, diced small |
1/4 cup onion, diced small |
2 cloves garlic, minced |
1/2 cup minced fresh jalapeno pepper |
2 tablespoons chopped cilantro |
1 teaspoon chili powder |
1/2 teaspoon cumin |
salt and pepper |
1/2 cup water |
Directions:
1. Rinse and drain hominy and beans. 2. In a large saucepan, combine all ingredients and heat throughly. |
