Best when eaten the same day it's made. From Southern Living, May 2008. Cooking time is chill time. Ingredients:
2 medium tomatoes, seeded and diced |
1 medium avocado, diced |
1/4 cup white onion, diced |
1 jalapeno pepper, seeded and finely chopped |
2 tablespoons lime juice |
1 tablespoon olive oil |
salt, to taste |
Directions:
1. Toss together first 6 ingredients in a medium bowl. 2. Cover and chill 1 hour. 3. Season with salt to taste. |
