I make this every year and every year I have to remember to save a little bowl for myself because it always GONE Ingredients:
5 lbs potatoes |
6 eggs |
1 onion |
2 celery ribs |
1 1/2 cups mayonnaise |
1 tablespoon salt |
1 1/2 teaspoons pepper |
1/4 cup white wine vinegar |
3 tablespoons mustard |
2 teaspoons sugar |
Directions:
1. fill a large pot with water. 2. Wash potatoes and cut into cubes (I leave skins on, but you can always peel). 3. put potatoes into pot and cook until tender to poke. 4. hard boil 6 eggs. When cool, chop into coarse pieces. 5. chop onions & celery. 6. Drain and let potatoes cool until luke warm. 7. In a bowl, mix remainder of ingredients together. 8. Mix potato, chopped eggs, onions, celery and wet mixture together. 9. chill and serve. |
