Berries are my fave and so are the cream cheese . Mixing the chocolate chunks with them in a buttermilk soften cake simply is ..... as my son put it ' fantastico ' Ingredients:
114 g butter |
1 1/4 c plain flour , 1 tsp baking pwd , 1/2 tsp salt - sifted |
3/4 c sugar |
2 l eggs |
1/3 c buttermilk |
3 oz baking chocolate chunks |
3 oz white chocolate chunks |
icing |
8 oz cream cheese |
3 tbsp blackberry ( or strawberry jam ) |
1/4 c icing sugar , sifted |
topping |
fresh blackberreis ( or strawberries ) |
Directions:
1. Pre heat oven at 180 deg C . 2. Grease a 9 inch square pan . 3. Beat the sugar and butter for 5 mins until softer . 4. Add the eggs and beat until well mixed . 5. Add the buttermilk and beat for 1 min . 6. Add the sifted ing. and mix well . 7. Fold in the chocolate chunks . 8. Bake for 40 mins . 9. Cool and remove from pan . 10. ............................................. 11. Beat the icing ing. for 5 to 6 mins until creamy . 12. Spread on the cake . 13. Arrange the berries on top and chill for 1 hour before serving . |
