What I did to get my Michael to try fresh asparagus. Also very low fat / low cal. Ingredients:
1/2 lb asparagus, raw |
1/4 tbsp smart balance |
1/2 tbsp brown sugar |
1/4 cup chicken broth |
1/4 tsp sesame oil |
Directions:
1. Rinse asparagus and discard tough ends. Snap into pieces or leave whole. 2. In a skillet over medium-high, heat butter and brown sugar until sugar is dissolved. 3. Add asparagus; saute for 2 minutes. 4. Stir in chicken broth and sesame oil; bring to a boil. 5. Reduce heat; cover and simmer for 5 minutes or until asparagus is crisp-tender (I like very crisp veggies...if you prefer mushier, softer asparagus just let it go 5 or so minutes longer). 6. Remove asparagus to a serving dish and keep warm. 7. Cook sauce, uncovered, until reduced by half. 8. Pour over asparagus and serve immediately. |
