Ingredients:
5 medium cucumbers, peeled
2 cups cauliflower florets
4 cups peeled white pearl onions
2 cups carrots, sliced
4 cups bell peppers, any color
3 cups white vinegar
1 1/2 cups water
5 cups granulated sugar
2 1/2 cups white vinegar
2 1/4 water
2 1/4 teaspoons pickling spices
Directions:
1. Take cukes& cut them into 8 pieces which will give you 40 slices.
2. Place in LARGE bowl.
3. add all the veggies.
4. Stir water& salt together, pour over veg mixture let stand on counter overnight.
5. Drain.
6. Put veggis in large sausepan.
7. Add vinegar& water.
8. Boil.
9. Stir frequently.
10. Cook for 15 min.
11. Drain.
12. BRINE: Combine sugar, vinegar& water in saucepan.
13. Tie pickling spice in double layer of cheesecloth.
14. add to brine boil 1 min.
15. discard spice bag.
16. Pack hot veggies into jars, fill with brine.
17. Put sterilized lids,& seal.
18. You may want to put them in a water bath for 5 min.
19. let stand for 3 weeks before serving.
20. Makes app.
21. 6 pints.
