Ingredients:
2 red onions, cut into 1/8 inch slices
1 cup red wine vinegar
1 cup water
Directions:
1. In a big bowl or big jar with a lid, submerge the onions in the vinegar and the water.
2. Let sit for at least 12 hours or, covered, up to 2 weeks.
3. Squeeze the excess liquid from the onions before using.
