this lasts several weeks refrigerated, and makes a nice condiment to steaks Ingredients:
1 cup cider vinegar |
1/2 cup sugar |
1 teaspoon toasted cumin seed |
1 teaspoon salt |
3 red onions, cut in chunks |
3 tablespoons chopped cilantro |
Directions:
1. bring vinegar, cumin, salt and sugar to a boil in a saucepan, then reduce heat and simmer 5 minutes add onions,simmer for 2 minutes more. 2. transfer to a bowl, stir in cilantro. 3. this tastes better after it sits for a few days or more, covered and refrigerated. |
