A wonderful combination of flavors to be served cold. I like to eat them with cottage cheese. Ingredients:
1 cup cider vinegar |
1 cup water |
1/2 cup evoo (extra virgin olive oil) |
2 garlic cloves, crushed |
1 tsp salt |
1/2 tsp thyme leaves |
6 whole cloves |
6 peppercorns |
1 bay leaf |
1 lb. fresh button mushrooms |
Directions:
1. In sauce pan over medium heat add all ingredients EXCEPT for mushrooms. Bring to boil, reduce to low, cover and simmer for 15 minutes. 2. Pour mixture over cleaned mushrooms. Put into good container (mason jar, old jars you have kept or good plastic one) and chill in fridge. 3. Let marinate for a couple of days before eating for more flavor. |
