All You, AUGUST 2007 Ingredients:
2 lbs green beans, trimmed |
1/4 cup red wine vinegar |
1/2 red onion, sliced |
salt and pepper |
2 tablespoons chopped fresh dill |
2 tablespoons chopped fresh parsley |
2 tablespoons olive oil |
Directions:
1. Bring a pot of salted water to a boil. Add beans and cook until crisp-tender, 4 minutes. Drain; pat dry. 2. In a bowl, toss beans with vinegar, onion, salt and pepper; chill for 45 minutes. 3. Toss with herbs and olive oil. Cover; chill for 4 hours, stirring often. |
