1 lb green beans |
1 cup cider vinegar |
2 tablespoons sugar |
2 teaspoons mixed pickling spices |
1/2 teaspoon salt |
1 garlic clove, chopped |
1/2 cup chopped fresh dill |
Directions:
1. Trim beans. Heat 1 quart of water to boiling, add beans and cook 5 minutes until just tender, but still bright green. 2. Drain, reserving 1/2 cup of cooking liquid. 3. In a small saucepan, combine vinegar, sugar, spices, salt, garlic and dill. Add reserved liquid. Stir well. 4. Cook over medium heat for 5 minutes. 5. Place beans in a 2 quart jar or bowl. Pour vinegar mixture over beans, cover, and refrigerate for 24 hours or longer. |
