Ate this once upon a time at a family owned business,wanted to try this at home. Ingredients:
2-1/2 cups water |
1-3/4 cups white vinegar |
2 tablespoons sugar |
1-1/2 teaspoons salt |
20 peppercorns |
16 whole allspice |
1(1 pound) ring of bologna (not sliced) |
1 large onion,sliced into rings |
1(7-1/2 oz) jar of roasted green chilies |
Directions:
1. Combine water,vinegar,sugar,salt,peppercorns and allspice in saucepan. 2. Bring to boil. 3. Reduce Heat. 4. Cover,simmer 10 minutes. 5. Remove from heat,cool completely. 6. Cut bologna into 1/2 pieces. 7. Layer bologna,onion rings and roasted chilies in large glass casserole. 8. Pour cooled liquid over top. 9. Cover and refrigerate 3 days. |
