As it has been said, some people will pickle anything...I love these all year long, not just New Year's. We pour them on top of a block cream cheese and eat them with sturdy chips. Ingredients:
4 cups of cooked blackeyed peas |
1 cup oil |
1/2 of cider vinegar |
1/2 cup of thinly sliced onions |
1/2 teaspoon of salt |
several grinds of black pepper |
6 cloves of chopped garlic, very fine |
2 jalapeno peppers, minced |
extra tabasco sauce if desired |
Directions:
1. Combine all ingredients. 2. Place in covered container. 3. Resist eating for two days. 4. Dig in. (the longer they sit, the better they taste!) |
