                    Pickled Beets. Not pickled like cukes, but good for prepping for a dinner the night before. Ingredients: 
                    
                        
                                                1 c vinegar  |  
                                                1 c water  |  
                                                1/2 c sugar  |  
                                                1/2 tsp salt  |  
                                                1/4 tsp white pepper  |  
                                                3 c cooked beets, peeled and thinly sliced  |  
                                                1/2 tsp celery seed  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Combine water, vinegar, salt, sugar, and pepper and bring to a boil in a non-reactive saucepan. 2. Cool the 'brine'. 3. Place beets in a glass bowl and sprinkle with celery seed. 4. Cover with 'brine'. 5. Cover bowl with plastic wrap and refrigerate overnight.                              |
