This sweet and sour beet recipe was given to me by my German mother-in-law 37 years ago when I married my husband. Until then I had never even eaten beets.
Ingredients:
1 15 oz. can of sliced beets - retain 1/2 the beet juice
2 tbsp olive oil
2 tbsp red wine vinegar
1/2 tsp sugar
2 tbsp dried onion flakes
salt and pepper to taste
recipe can easily be doubled or tripled for a larger crowd.
Directions:
1. Put beets and 1/2 beet juice into a medium bowl.
2. Add the remaining ingredients and stir together. Sugar can be left out if you are watching your sugar intake and flavor is still wonderful.
3. Chill for at least 1 hour for best results.
4. If doubling or tripling the recipe, chill for longer amount of time.
