This is an old recipe my mother-in-law had. I don't know where she got it from but, they are very good. Ingredients:
2 cans (1 lb. each) sliced beets |
1 1/2 c. sugar |
3/4 c. vinegar |
3 cinnamon sticks |
Directions:
1. Drain beets, reserving liquid. 2. In small sauce pan, combine sugar,vinegar ,cinnamon sticks and reserved liquid. 3. Heat to boiling, stirring constantly until sugar melts. 4. Place beets in a bowl and pour in liquid. Cool and cover bowl and refridgerate for at least 8 hours. 5. To serve, remove with slotted spoon. 6. Makes 3 cups. |
