This is another recipe I obtained from mylate mother-in-law. I used to not like beets but this one did it for me. She used fresh beetsthat she roasted before pickling. I like it both ways but prefer the easier method which is using the canned beats. Read more . These are light, refreshing and goes good with anything. Ingredients:
32 ounces canned sliced beets |
1-1/2 cups sugar |
3/4 cup vinegar |
2 cinnamon sticks |
Directions:
1. Drain beets reserving liquid in small saucepan. 2. Add sugar, vinegar and cinnamon sticks to reserved liquid. 3. Heat to boiling stirring constantly. 4. Pour over beets then cool, cover and refrigerate at least 8 hours. 5. To serve remove beets with slotted spoon. |
