A simple recipe for pickled beets without added spices. The beets come out with a great sweet and sour taste, which I prefer. Try making them with cider vinegar for a different taste. NOTE: I wear disposable plastic gloves when handling the beets. Ingredients:
1 1/2 lbs baby beets |
1 1/2 cups white vinegar |
1/2 cup water |
1 cup brown sugar |
Directions:
1. Cook beets in salted water until just tender. Peel and pack in hot sterilized jars. 2. Make the brine - Combine the vinegar, water and brown sugar in a large pan. Bring to a boil and simmer 5 minutes. 3. Ladle, hot mixture over beets, covering completely. Make sure you leave about 1/8 headspace. Seal jars & label. 4. Store in a cool dark place. |
