This is a recipe I got from my sister. I always lose it and phone her every year to get it again. Now it should be easier to find!! I like this recipe as there is no water in it and just the right amt. of sugar and spice. Ingredients:
3 pints small beets |
1 1/2 cups vinegar |
1 cup sugar |
1 teaspoon pickling salt |
2 tablespoons pickling spices (size of golf ball) |
Directions:
1. Boil beets until tender. 2. Peel in cold water. 3. Drop into hot sterilized jars. 4. Boil brine for 1 minute. 5. Pour over beets and seal. 6. Note: I usually put spice in a tea ball and discard the spice after boiling. |
