Pickled Beet Salad

My mom used to make this and it is different and good
Ingredients:
6 or 8 beets as much same size as possible
extra virgin olive oil
vinegar of choice
2 medium vidalia or sweet onions
fresh italian parsley
Directions:
1. Remove beet greens
2. wash beets thouroughly
3. place in boiling water that covers all beets by an inch
4. 1 tsp kosher salt in water
5. cook testing beets until fork tender but not mushy
6. remove with slotted spoon asnd place in ice water bath
7. slice onion thinly and cut circles in half
8. place in bowl with 2 to 3 tablespoon of oil
9. vinegar to taste
10. de-stem parsley add leaves
11. remove skins from beets
12. quarter and slice medium thin
13. add to salad and fold all ingredients
14. serve in clear glass bowl to show up colors
15. Good with all meat main dishes
