These pickles are great beside any rice or meat dishes for a strong spicy sweet flavour. They will take time to be eaten but it's worth waiting. Ingredients:
3lb dates |
1 pint vineger |
1 tsp allspice |
1 tsp cinnamon |
1 oz (30g)coarse salt |
1 tsp ginger powder |
1 tsp powdered or grated nutmeg |
1/2 tsp brown sugar |
1/2 oz (15g)chilli powder |
1 tsp cloves |
Directions:
1. Boil vinegar,cloves ,spices and sugar into a syrup. 2. Stone and half the dates and put into a jar. 3. Remave cloves from syrup and pour boiling syrup over the dates.(heat the jars so that they won't crack when the syrup is poured into them) 4. Cool,cover with foil and airtight cover. 5. Keep for two weeks when it will be really ready. 6. Shake the bottle from time to time. 7. PS:ceramic jars are best for pickles |
