Instead of spooning ketchup over a meat loaf, try using picante sauce. The picante sauce is lower in carbs than ketchup and adds a kick to the meat. Ingredients:
1 pound ground round |
2/3 cup whole wheat breadcrumbs |
1/2 cup chopped onion |
1/4 cup coarsely chopped carrot |
2 large egg whites, lightly beaten |
1/4 teaspoon salt |
1/4 teaspoon dried rubbed sage |
1/4 teaspoon pepper |
cooking spray |
1/2 cup picante sauce |
Directions:
1. Preheat oven to 400°. 2. Combine first 8 ingredients in a medium bowl. Shape mixture into a 6 x 4-inch loaf, and place on a rack in a broiler pan coated with cooking spray. 3. Bake at 400° for 35 minutes. Brush picante sauce over meat loaf. Return to oven, and bake an additional 5 minutes. Let stand 5 minutes before slicing. 4. carbo rating: 7 |
