Picante Chicken and Peppers |

It's so easy to create quick and tasty dishes with chicken. I created this one night when I had peppers that needed to be used up. I needed something quick, and to please the family there had to be some heat. We use medium or hot picante sauce, but you could use mild. Ingredients:
4 boneless skinless chicken breast halves |
1 teaspoon seasoning salt, to taste (i use seasonall) |
2 tablespoons butter |
1 onion |
1 clove garlic, minced |
1 green bell pepper |
1 yellow bell pepper |
1 red bell pepper |
1 cup picante sauce (your favorite - home made or store bought like pace - the heat of this sauce determines the heat of) |
Directions:
1. Pound the chicken breast halves with a meat mallet until uniformly about 1/4 thick. 2. Sprinkle them with a generous coating of seasoned salt on one side. 3. Melt butter in a skillet and saute the chicken breast halves until golden brown, about 3- 5 minutes per side. 4. Slice onion into 1/4 thick slices and quarter the slices. 5. Cut all peppers into strips about 1/4 wide. 6. Add onion, garlic and peppers to the sauteed chicken breasts and saute for a few minutes. 7. Add the picante sauce over the top of the chicken and vegetables. 8. Cover and simmer for about 5- 10 minutes, until vegetables are tender. 9. Serve over hot cooked rice. |
