I found this recipe in a little cookbook That I paid a dollar for, I thought it looked good,and It is. Bean soup with a little kick, can't get better than that. Ingredients:
4 slices bacon |
1 large onion, chopped |
1 clove garlic, minced |
2 cans (15 ounces each) black beans, undrained |
1 can ( about 14 ounces) beef broth |
1 1/4 cups water |
3/4 cup picante sauce (mild, medium,or hot ,your choice) |
1/2 to 1 teaspoon salt |
1/2 teaspoon dried oregano leaves |
sour cream |
crackers, tortilla chips ,or flour tortillas, what ever you like. |
additional picante sauce for serving |
Directions:
1. Cut bacon into 1/2 x 1/2 inch pieces 2. Cook and stir bacon in a large saucepan over medium-high heat until crisp. Remove with slotted spoon; drain on paper towels. Set aside. 3. Add onion and garlic to drippings in saucepan; cook and stir 3 minutes. 4. Add beans with liquid, broth, water, 3/4 cup picante sauce, salt to taste,and oregano. 5. Reduce heat to low. Simmer covered, 20 minutes. 6. Ladle into soup bowls; dollop with sour cream. 7. Sprinkle with bacon. 8. Serve with crackers, tortilla chips or flour tortillas, and additional picante sauce. |
