This is supposed to be a meatless dish but I always add hamburger to it to make it heartier.
Ingredients:
2 tubes (12 oz each) refrigerated buttermilk biscuits
1 jar (16 oz) picante sauce or salsa
1 medium green pepper, chopped
1 medium onion, chopped
1 can (2 1/4 oz) sliced ripe olives, drained
2 cups (8 oz) shredded monterey jack or cheddar cheese
optional
1 pound hamburger, browned and drained
Directions:
1. Quarter the biscuits; place in a greased 13x9x2-inch baking dish. Top with picante sauce, green pepper, onion and olives. Bake, uncovered, at 350F for 20 minutes. Sprinkle with cheese. Bake 10 minutes longer or until the cheese is melted.
2. If you add hamburger, just add it in when you top with picante sauce, green pepper, onion and olives.
