another take on breakfast tacos, remove the eggs and a wonderful luch or dinner entree .
Ingredients:
ground beef
left over baked potatoes
diced onions
diced bell peppers
diced tomato
cumin to tase
salt and pepper to taste
garlic powder to taste
scrambled eggs
cheese ( your fav)
sour cream (optional)
Directions:
1. bake potatoe the night befor
2. cut potatoes into 1/2 inch cubes
3. brown ground beef
4. remove from heat and add every thing else but eggs
5. scramble eggs in seperate pan
6. combine eggs and meat
7. put into your favorite taco vessel
8. top with cheese and sour cream
