Phyllis Emery's Homemade Egg Noodles |

My mother in law (the eponymous Phyllis Emery) went on an 'all natural from scratch' kick when my other half was diagnosed with ADD as a kid in the 70s. This is one of her 'from scratch' recipes. She wanted me to mention that when I typed it up! Ingredients:
1 egg, beaten |
1 1/2 teaspoons salt |
2 tablespoons milk |
1 cup all-purpose flour, sifted |
Directions:
1. Combine egg,salt, and milk. 2. Add enough flour to make the dough stiff - do NOT add all the flour at once. 3. Roll very thin on floured surface. 4. Let stand 20 minutes. 5. Roll up loosely. 6. Slice 1/4 inch wide. 7. Unroll and spread out. 8. Let dry 2 hours. 9. Drop into boiling salted water, soup, or broth. 10. Cook uncovered 10 minutes. |
